Favorite Things - Chocolate Chip Cookies DUH!

Drooling on your keyboard may occur, consider yourself warned!

What is it with a perfect cookie? The crisp outer edge, the soft and rich chocolate chips. The crumble and flake when you take your first nibble. Yum.

Last month I decided to whip myself into shape, somewhat quickly. I gave up sugar, carbs, alcohol and caffeine. I know crazy right? But honestly I felt so amazing!

What did I miss the most? Well, the caffeine addiction was hard to kick, but once that was conquered it was the sugar carb combo...namely, a cookie....or two, or three. Thus the problem!

These cookies are my tried and true favorites. The are NOT your average everyday chocolate chip cookie, trust me. My craving is pretty intense today, so my butter is softening on the counter, and you get to indulge as well.

I know this isn't a typical favorite thing, but these cookies have possessed my brain...so TAH DAH...you can inherit my craving too. You're welcome!

*warning - well, just don't say I didn't warn you how amazing they are*

chocolate chip cookies

INGREDIENTS
1/2 cup of butter flavored shortening
1/2 cup of butter, softened
3/4 cup of packed brown sugar
3/4 cup white sugar
2 eggs
1 teaspoon of vanilla extract
1 Tablespoon coffee-flavored liqueur

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups rolled oats
2 cups chocolate chips ( I recommend DARK chocolate - you know, it's healthy :)
1 cup chopped nuts (optional)

DIRECTIONS
1. Preheat oven to 375'

2. Grease cookie sheets

3. In a large bowl, cream together the shortening, butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and coffee liqueur. (It will be VERY liquidy at this point...that's okay)

4. Combine the flour, baking soda and salt: stir into the sugar mixture. Mix in the oats, chips and nuts.

5. Roll tablespoons of dough into balls, and place them 2 inches apart onto the prepared cookie sheets.

6. Bake for 10-12 minutes in the preheated oven, or until golden. Cool on a wire rack for a few minutes before eating!!
